#Whole30 Sweet Potato Chips

I don't know about you guys, but I love a snack with a good crunch. What's even better is a crunchy, organic snack that is a whole food <3

Let me tell you about Sweet Potato Chips.

They are delicious. I make them once a week because I'm a BIG sweet potato fan and I know my girls enjoy them too...and let me remind you they are a WHOLE food, that is not packaged or loaded with junk(cha-ching!)

Making them is so simple it feels like I'm being lazy...but they are THAT simple! They call for just 3 ingredients and 5 min of prep and then pop them in the oven. I want to start making them with different spices and flavorings and see how they are!

3 Organic Sweet Potatoes

Pink Himalayan Sea Salt

Extra Virgin Olive Oil Spray

Take your 3 organic sweet potatoes and slice them thinly. The thinner they are, the crispier they get and I prefer skinnier potatoes to make smaller chips..but let's be real, I wouldn't turn down larger ones :)

Lay out the thinly sliced potatoes on parchment paper on 1 cookie sheet (or 2 depending on the size) and spray lightly with Extra Virgin Olive Oil. Sprinkle a pinch of Pink Himalayan Salt across them and put them in the oven for about 1 hour on 250* Sometimes I turn the oven off and leave them in a little longer to get them extra crispy if they look like they need a little more time. Time can slightly differ depending on the thickness of the slices.

THAT'S IT guys...seriously. I'm not going to lie, me and the girls eat them all in one sitting usually...so be prepared to make them more than once a week because they are so good they are addicting...and it's a great way to get more veggies in your diet!
